Gluten and Butter. Or another day as an adult.
Good Morning Darlings,You know, some days are tough.You've got to brain drain at work, you've got to be a functioning human being and understand why one state could possibly dictate who our next president is going to be, maybe file your taxes, hop on the elliptical and tell yourself that it actually counts as a work out and then you've got to come home and make dinner.And sometimes darlings, even I don't really feel like making dinner. But I almost always do, because almost everything that I make tastes better than takeout. I'm not being a brat, darlings, I'm just saying that I like my cooking better than takeout and I like the way both my stomach and wallet feel after eating a home cooked meal. I also love the feeling of providing a delicious hot meal for le hubs every night (more on that soon).So on these days when just living feels like a lot of work, I love a really simple meal. Something that evokes good feels and makes you smile not only because it tastes delicious but also because it makes your house smell like butter.In her autobiography, "My Life in Paris," Julia Child recounts the first meal she had as her and Paul arrived in France...“It arrived whole: a large, flat Dover sole that was perfectly browned in a sputtering butter sauce with a sprinkling of chopped parsley on top … I closed my eyes and inhaled the rising perfume. Then I lifted a forkful of fish to my mouth, took a bite, and chewed slowly. The flesh of the sole was delicate, with a light but distinct taste of the ocean that blended marvelously with the browned butter. I chewed slowly and swallowed. It was a morsel of perfection.”Hers was dover sole, mine was Pollock (on sale for $2.99 a pound at the local fish market, darlings, $2.99, and it's wild and I can feel ethical about eating it!!) but I think that Julia and I can both agree that Poisson Meuniere (don't let the name fool you, it's just white fish with butter and lemon) is a simple, delectable work of perfection.And also because sometimes you need to take a perfectly healthy piece of fish and turn it into something caloric and divine.Fish with Lemon and Brown Butter. INGREDIENTS1 lb white fish, cut into 4 filets6 tablespoons butter, plus more if you want to be extra naughty3 tablespoons flour2 lemons, juiced1/2 tsp salt1/2 tsp pepperMETHOD
- Sprinkle each piece of fish with flour, just covering each on all sides
- Heat 3 tablespoons of butter over medium heat until it begins foaming.
- Add the fish to the butter and cook on first side for 5 minutes, undisturbed.
- Add lemon juice
- Flip fish and add the secondary butter. Cook for 3 more minutes.
- Season with salt and pepper.
- Serve with a big green salad, potatoes of some kind and a huge glass of wine (or seltzer). And then pat yourself on the back for getting through another day as an adult.
